crock pot beef pot pie

I thought I would try this. It is more like beef and dumplings, only not quite. I had a can of beef in my cabinet. No clue where it came from. I am sure someone gave it to me. I have never seen it in the store or have any desire to buy it. I am sure you could use ground beef or any other meat.

This was made in my 4 quart crock pot for 2 adults and 2 toddlers. I used a recipe off http://recipes.bettycrocker.com for chicken pot pie and changed it for what I had in my fridge.

1 can beef (drained) or maybe half a pound hamburger

2 cans cream of mushroom soup

handful and a half of sliced carrots

1 cup milk

1 container of ready to make biscuits.

Spray inside of crock pot with cooking spray. Trust me, you really want to do this. Combine everything but biscuits in crock and mix well. Cook on high for 3-4 hours.

Place biscuits on top of the mixture and cook for another hour to an hour and a half. The top of the biscuits will be golden brown when done.

My opinion: it turned out a little more soupy than I like. Also it was a bit rich. I think I would cut it down to only one can of soup next time and add in some more veggies. I would have this time, but I did not feel like broccoli and cauliflower in it.

Crock pot every night?

I stumbled upon a crock pot once a day blog. Wow. I am impressed with what that woman cooked!

So we will give it a try. Every night for dinner till I get bored. The first 2 nights I forgot to take pictures. Night 3 I remembered after it had finished cooking and I served the kids. So we will pretend that is night 1 to make it easier on here.

Quick and easy to make Dinner in a packet

Someone introduced me to a Hobo Dinner. I have to admit that I was kinda iffy on it. I did put my own twist on it. Not much of one though. The link and recipe is at the end.

Basic recipe is:
ground beef
sliced potatoes
sliced carrots
sliced onion
salt and pepper to taste

I used a mixture of lean ground beef (we have a good meat market here) and pork sausage. My husband likes the flavor better. Also the meat remains more juicy. I have the ratio 1/4 -1/2 pork and the rest beef.

I like this recipe because you make each in its own tinfoil packet. This is nice if you have picky eaters or someone is on a diet. I have both. My husband is not a fan of veggies and I am on a diet. So I separated 3oz of ground beef out before I mixed in the ground pork (pork sausage works).

To the pork/ground beef I added some finely shredded carrot and zucchini. Make sure it is fine ground. I have found that neither my husband or the 2 little ones notice it. Doing this adds some extra veggies in. I have also done it with onions, spinach, and summer squash. Except with the spinach I blend it to a pulp.

Also I can add extra veggies to my packet. It makes dieting so much easier. I added some tomato, spinach, and mushroom to mine. That is in addition to the sliced carrots, sliced potatoes, and onions that were in all packets.

I never follow directions very well. I made each into its own foil packet. I put the meat on bottom, added the onion, carrots, then the potatoes. I also used a seasoning salt on top. I chose a spicy one for myself and used a “Hamburger seasoning” for the others. I did not put them on a pan.

Also I used my toaster oven. There are 2 adults and 2 toddlers ( 2year old and a 1 year old) here. So why use the oven when something smaller will work?

Serves 4

INGREDIENTS (Nutrition)

* 1 pound ground beef
* 5 potatoes, peeled and cut into steak fries
* 4 large carrots, peeled and sliced lengthwise
* 1 onion, peeled and sliced into rings
* salt to taste
* ground black pepper to taste
* garlic salt to taste

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C). Line a 9×13 inch baking pan with aluminum foil.

2. Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onion rings. Season with salt, pepper and garlic salt to taste.

3. Cover with aluminum foil and seal edges. Bake in preheated oven for 1 hour, or to desired doneness.

Cheap shoes for your infants/toddlers

I hate going shoe shopping for the kids. I admit, I am a cheap person. Or “thrifty” as most would say. I guess I have to be. Although I was also raised that way, yet my father made pretty good money.

I regress though. The cost of infant shoes is insane! Admittedly, my kids grow slow, so they spend a longer time in each size, none the less, shoes start out at $9.99 at Meijer and Walmart. Sure you can buy booties, but even those are $7.99 to start.

Today I paid $1.50 for each pair of shoes! I picked up one size 0, 1, 2 and 2 pairs of size 4. Clark is all set, I just needed something for the younger 2.

Where did I get this deal? Once Upon A Child! Yes! Admittedly, I rarely buy much there. Today I was in there looking for some toy trucks. I happened to go near the back and there were totes of shoes. Each size had its own tote. Almost all the shoes were in near new condition. A few were in very good. I think I only found one pair of “good” shoes. So it is not the shape you normally find at the thrift stores (yes, I look there too).

The price ranged form $1.50 to $5.99. They has name brands and all sorts of shoes. Slipons, lace up, booties, soft sole, hard sole, high tops, dress shoes…. and so on.

This store is not even in the better part of town. It makes me wonder what the other store has. That one is in a more well to do area, but it is also a 35 minute drive across town.

Needless to say, next time I need shoes for the kids, I will go to Once Upon A Child over the thrift store or Walmart/Meijer.

I am not going to even pretend to comprehend this. My husband built this for me and told me I should post whatever I want mom related. *shrugs* Ok.
